New Food Wednesday: Dec. 22, 2011

Just in time for Hanukkah!

What could these tasty little morsels be?

They're Flanken! Now if that doesn't sound like something you'd serve during the Festival of Lights, you obviously don't know your shtick.

Flanken are nothing more than beef short ribs cut across the bone.  They can be prepared in a number of ways (similarly to ribs in general) but the most common preparations are to braise or grill them.

For an excellent introductory recipe to this cut, try one of the most recent recipes from the NYTimes dining and wine section: http://www.nytimes.com/2009/07/08/dining/08appe.html

Eat good food.  Drink good beer.  And above all, stay classy!
